
2021 Grenache, Fox Family Vineyard
Vineyards and Composition: 93% Fox Family Vineyard Grenache and 7% Fox Family Vineyard Syrah; Los Olivos, Santa Barbara County.
Barrel Aging and Cooperage: Twenty-two months in four year old 500L French oak puncheon (T. Mercurey).
Winemaking: The Grenache grapes for this wine are grown on a steep, South-East facing, rocky hillside block of the Fox Family Vineyard in the hills of Los Olivos. This tiny vineyard is planted to the 362 clone of Grenache and farmed entirely by hand. These grapes are hand harvested, hand sorted, 80% destemmed without being crushed, leaving approximately 90% whole berries and 8% whole-cluster Syrah, into two 1 ton open top fermentors. The must was cold-soaked for five days, with the addition of dry-ice, prior to inoculation and punched down by hand one to three times per day until fermentation was complete. The free run wine was drained off and the remaining must was basket pressed and settled before being racked to 500L French oak puncheons for aging. Ten percent of the free run juice was bled off for rosé to help richen the color and add structure and depth to the wine. This wine was aged in puncheon for an additional twenty-two months prior to being racked from barrel and bottled in late August of 2023.
