2025 Vermentino
Vineyards and Composition: 100% Fox Family Vineyard, Los Olivos
Barrel Aging and Cooperage: 100% Barrel fermented in older French oak (Gillet and Mercurey) and then racked to stainless-steel for aging
Winemaking: This is the seventeenth vintage of Vermentino from the Fox Family Vineyard. Vermentino is thought to have originated in Spain and has made amazing, crisp food-friendly wines in Italy and Southern France where it is named Rolle. I like to enjoy this wine with oysters on a warm spring or summer day, by the pool or with shellfish. These grapes come from a tiny, high density block on a rocky slope of the organically-farmed, Fox Family Vineyard. The grapes were hand harvested, sorted and whole-cluster pressed to preserve the fresh, crisp and aromatic qualities of this unique white wine. The juice was then fermented in all older French oak barrels while preventing malo-lactic fermentation with sulphur dioxide and aged for 5 months in stainless steel. This wine was bottled in late February of 2026. Intense aromas of gardenia, honeysuckle, white peach, citrus and a subtle lemon cream precede refreshing citrus, watermelon rind and honeydew melon flavors.

Bottle Aging: Best enjoyed young to enjoy the crisp minerality and stone fruit, but can be aged up to 4 years
